Here’s an easy and calcium-rich recipe for you: Spinach Spanish Omelette
Ingredients: tbsp olive oil, 1 onion (peeled and chopped), 300g fresh spinach leaves, 5 eggs (beaten), 3 cups of grated mozzarella cheese, ¼ tsp salt and 1/8 tsp freshly ground black pepper.
1. Preheat oven to 180 degrees and lightly grease pie dish.
2. Heat oil in large fry-pan over medium-high heat. Add onions, cook (stirring occasionally), until soft. Stir in spinach and continue cooking until excess moisture has evaporated.
3. In a large bowl combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie dish.
4. Bake in preheated oven until eggs have set (about 30mins). Let cool for 10mins before serving
